Serves: 4
Ingredients:
6 Ounces (4 hot dog buns)
7 Ounces (for 4 hot dogs, beef or pork)
7 Ounces (4 of the potato and cheese pierogies) (store-bought or homemade)
1 Cups cup sauerkraut, drained
1.5 Cups large onion thinly sliced
2 Tablespoons butter
2 Tablespoons olive oil
2 Pinches salt & pepper (to taste, more or less)
1 Tablespoons mustard (for serving, definitely optional)
Instructions:
1. Prepare the Pierogies
Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a skillet over medium heat.
Add pierogies and cook until golden brown and crispy on both sides, about 3-4 minutes per side. Remove from skillet and set aside.
2. Caramelize the Onions
In the same skillet, add the remaining butter and olive oil.
Add the sliced onions and cook over medium-low heat, stirring occasionally, until onions are golden brown and caramelized, about 15-20 minutes. Season with a pinch of salt.
3. Warm the Sauerkraut
Add the drained sauerkraut to the skillet with the caramelized onions. Stir to combine and heat through for 2-3 minutes.
Cook the Hot Dogs
Grill or pan-fry the hot dogs until heated through and lightly charred, about 5-7 minutes.
4. Assemble the Hot Dogs
Place a hot dog in each bun. Top with a crispy pierogi, a generous scoop of the sauerkraut-onion mixture, and a drizzle of mustard, if desired.
5. Serve
Serve immediately, with plenty of napkins!
